Summer Smoothie

Summer is indeed my favorite season, especially since it’s the best time of the year to take advantage of luscious garden-fresh fruits and veggies. Right now, seasonal produce is abundant, affordable, and exceptionally nutritious. It’s easy to fill your diet with antioxidant-rich fruits, vegetables, and herbs that are bursting with freshness. Making smoothies is an excellent way to savor the flavors of summer.

This is my favorite breakfast or post-workout smoothie that my body needs for fuel. Fresh tropical fruits combined with spinach and yogurt are the essential ingredients in this recipe to provide that daily boost of energy.  Follow this recipe or become inspired to create your own version. I bet you already have many fresh fruits in your kitchen. How do you make yours? Start experimenting with your favorites and share your creations here!

1/2 cup guava juice (or any fruit juice)
1/2 cup coconut water
1/2 cup ice
2 nectarines
2 kiwis
1/4 cup blueberries
1/2 cup mango
1/2 banana
1/4 cup Greek yogurt
1 handful of spinach
1 tsp local honey, optional

Start with your base by adding the liquids first. Add the juice, coconut water, and ice first to the blender to ensure it processes smoothly.

Add remaining ingredients, roughly chopped and peeled.

Spinach contains high amounts of antioxidants, chlorophyll, and dietary fiber.  Spinach is an excellent source of vitamins and mild in flavor, so you will barely know it’s there.

Blend for 1-2 minutes, until you reach your desired consistency.
If it’s too thick, add some more coconut water.  If it’s too thin, add the other half of the banana and/or more ice.

Food for your body and food for your brain!
